The major sugars present in citrus fruits are: glucose, fructose, sucrose and myo-inositol and comprise up to 75% to 90% of total soluble solids in citrus juice.
Sucrose is the major constituent accounting for 50% of the total sugar in sweet citrus (mandarins). Fructose is present in a slightly larger amount than glucose.
The reducing sugar contents (sum of glucose and fructose) in lemons, limes and grapefruits (50.4-75.8%) are significantly higher than the contents of the nonreducing sugar- sucrose.
Lemons have the lowest amount of total sugars.
