Strawberries, lemon & pecan salad with whipped goats cheese

Serves: 8

Ingredients:

  • 200g Chevin
  • 200g mascarpone
  • 1 small garlic clove
  • ½ LemonGold® lemon, juice & zest
  • 80g fresh rocket
  • 400g strawberries, chopped
  • ½ LemonGold® lemon, very thinly sliced
  • 100g pecan nuts, toasted
  • 1 handful fresh basil
  • 1 tbsp honey (optional)

Method:

  1. Place the chevin, mascarpone, garlic, LemonGold® lemon juice, zest and salt and pepper and blitz until smooth. Thinly slice the lemon.
  2. Spoon the whipped goats cheese onto a large platter. Top with rocket, strawberries, lemon slices, pecan nuts and fresh basil. Finish with a drizzle of honey.
