Preserved ClemenGold® mandarins

This twist on preserved lemons adds a wonderful salty citrus pop to any savoury dish. They also make great little homemade gifts.

  • 2-3 ClemenGold® mandarins
  • Salt
  • Cumin seeds


  1. Slice each ClemenGold® mandarin into 8 wedges.
  2. Add a layer of salt to the bottom of the jar, then pack a layer of ClemenGold® wedges in tightly. Top with salt and the cumin seeds. Repeat until the jar is full and tightly packed.
  3. Leave in the fridge for 6-8 weeks before first use.
  4. Add to chicken bakes, tagines, salmon dishes or aromatic rice dishes. Remember to always keep refrigerated.
