Fried Halloumi with ClemenGold® and Date Syrup

Ingredients:

For the syrup:

  • 4 tbsp Woolworths date syrup
  • 1 ClemenGold mandarin, zested and juiced
  • 3 bay leaves
  • 2 sprigs rosemary

For the lavash:

  • 100 g flour, plus extra for dusting
  • 50 g wholewheat flour (or use plain flour if preferred)
  • ½ tsp salt
  • 3 tbsp oil
  • 5 tbsp water
  • 2 tbsp Woolworths roast seed-and-coriander dukkah spice
  • Sea salt, for sprinkling
  • 300 g halloumi, torn

Method:

Make the syrup:

  1. Add all the syrup ingredients to a small saucepan.
  2. Let it gently simmer for 3 to 5 minutes, then set aside to infuse.

Prepare the lavash:

  1. Preheat your oven to 220°C. Mix both flours and salt in a bowl. Make a well in the centre and add 2 tablespoons of olive oil. Slowly pour in the water and stir until a firm dough forms.
  2. Turn the dough out onto a floured surface and knead briefly.

Shape and bake:

  1. Divide the dough into small balls and roll each into an oval shape, about 15 cm long.
  2. Place them on a baking tray lined with baking paper. Brush with a bit of water and sprinkle with dukkah and sea salt. Bake for 7 to 10 minutes or until golden and crisp.
  3. Allow to cool on a wire rack and warm again just before serving if needed.

Fry the halloumi:

  1. Heat a pan over medium heat. Fry the halloumi pieces until golden on each side.
  2. Remove from the heat and drizzle with the ClemenGold mandarin and date syrup.

Tip:

If you are short on time, you can swap the lavash for fresh baguette slices.
