Fresh ClemenGold® Mandarin, Honey & Mint Wraps

These gorgeous ClemenGold® mandarin fresh fruit rolls are a great way to get the little ones involved in making their own lunch box treats.

You can go wild and add crunchy nut butter or even a little bit of grated chocolate as they both work perfectly with mandarins

This recipe is gluten free and full of natural sweetness and because it’s loaded with ClemenGold® mandarins, it’s one of your 5-a-day but the kids don’t need to know that!

Ingredients:

Fresh rolls

  • 10 ClemenGold® mandarins
  • 10 (22cm/8.5”) rice paper sheets
  • 50g fresh honey
  • 20 small mint leaves
  • selection of edible flowers

Dipping sauce

  • 3 ClemenGold® mandarins, juiced
  • 1/2 LemonGold® seedless lemon, juiced
  • 1/2 tsp honey

Method:

  1. Firstly, prepare all of your fillings, peel and segment the ClemenGold® mandarins & pick the mint.
  2. Fill a large baking dish with warm water and dip the rice paper sheets in (one at a time), after a few seconds you will feel the sheet softening and becoming more pliable.
  3. Once soft, remove from the water and place on a chopping board.
  4. Drizzle some local honey into the centre and place some mint leaves and flowers on top.
  5. On top of this line up your ClemenGold® mandarin segments, leaving space at the ends so it can be sealed.
  6. Once you have the rolls filled with all your delicious ingredients, fold in each end to seal in all the fruit.
  7. Just like you are making a spring roll, fold up the bottom and roll to fully enclose all your fillings.
  8. These can be kept refrigerated until needed.
  9. For the dipping sauce, simply juice the ClemenGold® mandarins, LemonGold® seedless lemon and add the honey, mix and keep chilled until needed.
  10. To serve, place all the ClemenGold® mandarin rolls on a serving platter and pop the dipping sauce on the side.
