Crispy LemonGold<sup>®</sup> Chicken Tenders

Crispy LemonGold® Chicken Tenders

Makes: 4 to 6

Ingredients:

For the sauce:

  • ⅓ cup olive oil
  • 1 tbsp crushed garlic
  • 1 tbsp crushed ginger
  • 1 tsp chopped chilli
  • 2 tbsp Woolworths Asian Chilli Szechuan Pepper Oil
  • 1 tbsp honey
  • Juice of 1 seedless LemonGold lemon

For the crumb coating:

  • 100 g flour
  • 3 free-range eggs
  • 1 x 135 g tub Woolworths plain crumbs
  • 1 tsp dried dill
  • Zest of 1 seedless LemonGold lemon

For the chicken:

  • 500 g chicken breasts
  • 2 seedless LemonGold lemons, halved and charred

To serve:

  • Burger buns
  • Mayonnaise
  • Lettuce
  • Rocket

Method:

  1. Start with the sauce. Add all the sauce ingredients to a small pot, bring to a boil and let it bubble for a minute or two. Then take it off the heat and set aside.
  2. Set up three shallow bowls. One with flour, one with beaten eggs and one with a mix of crumbs, dried dill and LemonGold lemon zest.
  3. Slice the chicken into strips. Coat them in flour, dip into the egg, then press into the crumb mix until they’re fully covered.
  4. Place the chicken strips and the two halved lemons into the air fryer. Cook at 180°C for 12 minutes or until the tenders are golden and crisp. Squeeze the charred lemon juice over the cooked tenders.
  5. Serve the tenders in a burger bun with mayo, lettuce and rocket. Or, toss them in the lemon sauce and plate up with steamed rice and chopped spring onions.
