ClemenGold® Mandarin Teriyaki Pork Tacos

Who doesn’t love a tasty taco night? The joy of dropping everything in the centre of the table and watching everyone help themselves is a sight I’ll never tire of.

The spicy beans, caramelised teriyaki pork paired with the cooling sweet ClemenGold® mandarin is hands down my new favourite flavour combination.

Prep time: 35 minutes

Cooking time: 20 minutes

Serves: 4

Ingredients:

Black beans

  • 2 tbsp olive oil
  • 1 medium onion
  • 1 red chili
  • 2 cloves garlic
  • 1/2 tsp ground cumin
  • salt & pepper
  • 1 ClemenGold® mandarin zest
  • 1 x 400g tin black beans

Teriyaki pork

  • 1 tbsp olive oil
  • 400g pork belly
  • 1 tsp paprika
  • 1/2 tsp crushed fennel seeds
  • 1 tbsp honey
  • 1 tbsp teriyaki sauce

Tomato salsa

  • 1/2 red onion
  • 10 cherry tomatoes
  • 1 tbsp chopped coriander
  • 1/2 ClemenGold® mandarin, juice
  • 2 tbsp olive oil
  • 1/2 tsp ground cumin
  • salt & pepper

Additional fillings

  • 5 ClemenGold® mandarins, segmented
  • lettuce
  • avocado
  • sour cream
  • 8-10 taco shells
  • coriander & fresh chili

Method:

  • Pour the beans into a medium pan add the oil, onions, garlic & chilli and cook over a low heat until soft.
  • Add the ClemenGold® mandarin zest & cumin, mix through well.
  • To this add the tin of black beans and their juice and cook slowly until the beans soften.

 

  • For the pork belly, slice and dice and add the paprika and fennel. Mix.
  • Into a frying pan, add the oil and once hot add the spiced pork pieces and cook until golden brown.
  • To this add the teriyaki sauce and honey and cook for a further 2-3 minutes until beautifully caramelised and the pork is cooked.

 

  • To make the salsa, simply, finely dice the red onion and quarter the tomatoes.
  • Add this to a bowl with the olive oil, ClemenGold® mandarin juice, coriander, cumin and seasoning.

 

  • The hard work is done now, all you have to do is sit back and load up your taco shells with all these delicious fillings.
